
As a foodie, I typically try to avoid chain restaurants. I prefer to spend my money locally and drive my referrals to small businesses. However, when it comes to places like PF Chang’s, with its huge menu and vast selection, I tend to make an exception. It’s a great place to dine with kids because of the busy and vibrant atmosphere. Also with the extensive menu, even the pickiest kid can find a meal that appeals to them. It’s a win-win!!
When we dine in, we love to order the chicken lettuce wraps for an appetizer. It’s affordable, comes in a large enough portion to share with our family of six and is one of the healthier choices on their menu. My children love all the topping choices and enjoy making various concoctions to try. I recently decided to recreate this magic at home!
My husband and I are both chili-heads and have managed to pass on our love for spicy food to our kids. When developing this recipe, I decided to give it a Thai Twist and kick it up a notch. My kids approved and even my 5yr old appreciates the extra layer of spice. We typically pair the lettuce wraps with a scoop of white rice and bowl of miso soup. This is one of those “unicorn” meals that the entire family appreciates. And if you have 3 or more kids, you understand just how rare this is!
