I am a huge fan of soup. I don’t discriminate, I love it ALL. For me, there is something very cathartic about peeling, chopping, and adding ingredients to a large pot. As much as I love utilizing my gas cooktop with a cast iron pot, I am equally as in love with my Instant Pot. It allows me to create food in a fraction of the time without sacrificing any flavor. Butternut Squash soup is perfect for the Instant Pot because the veggies come out softer, providing a silkier texture once blended. I am pretty picky about texture and this recipe gets it right every single time. If you don’t have an Instant Pot, I highly recommend that you get one, ASAP!
