Instant Pot Butternut Squash Soup

I am a huge fan of soup. I don’t discriminate, I love it ALL. For me, there is something very cathartic about peeling, chopping, and adding ingredients to a large pot. I imagine myself cooking in Pioneer times, providing a healthy and hearty meal for my hungry family. The open flame (from my gas cooktop) and savory smells inspires a feeling of coziness and warmth. Pair the soup with some warm fresh baked bread and I am on cloud 9!

As much as I love utilizing my gas cooktop with a cast iron pot, I am equally as in love with my Instant Pot. It allows me to create food in a fraction of the time without sacrificing any flavor. Butternut Squash soup is perfect for the Instant Pot because the veggies come out softer, providing a silkier texture once blended. I am pretty picky about texture and this recipe gets it right every single time. If you don’t have an Instant Pot, I highly recommend that you get one, ASAP! Another tool used in making Butternut Squash soup is an immersion blender. This handy gadget is fun to use and is quite versatile. I use it for making smoothies, shakes, soups, and basically anything I would use a blender for. I picked mine up for $45 and it came with several accessories and a blending cup. The whisk attachment is great for making whipped cream or frothing your bullet proof coffee – a recipe for another day! If you don’t own one of these amazing kitchen tools, you need one yesterday!

Butternut Squash Soup is a very hearty soup that will keep your hunger at bay for several hours. It’s also super healthy and delicious. I have picky eaters and this soup allows me to sneak in several vegetables without them ever knowing.
